Earlier this year, she cut down on carbohydrates and started cooking more, and she often posts really nice shots of what she’s cooking and eating around Austin, such as this piece of salmon stuffed with spinach and feta cheese that she rolled into a pinwheel.
UPDATE: After several readers called or emailed asking for this recipe, I asked Amber if she wanted to share a recipe or overview for how she made them. Here’s what she had to say:
It’s salmon, cut thin, which the fish monger at a place like Whole Foods will do for free on request. (Just tell them you’re about to pinwheel it.) You may want to add some other cheeses to the feta you use inside. Roll and bake at about 350 for 15-18 minutes or until fish is cooked.
