After years of success selling gluten-free pizza crusts and buns to restaurants across the country, the Austin-based Smart Flour Foods is also enjoying success on the retail market with a frozen line of ready-to-bake gluten-free pizzas.
The company launched the pizzas with three flavors — pepperoni, margherita and cheese — and recently added three more: chicken sausage, sundried tomato and escarole, and two-meat Italian.
All the meat is uncured, and the pizzas do not contain preservatives. The crusts are made with sorghum, amaranth and teff flours and crisp up nicely when baked.
My kids practically inhaled the pepperoni without any clue that the crust was somehow “different” than what they normally eat.
